2018-2019: Arrival and meeting Victoria[]
Ellis arrives in the village in September 2018, meeting Victoria Barton in The Woolpack for a date arranged online via a dating app. Victoria bores Ellis with constant talk about her estranged husband Adam Barton, so he instead flirts with an old friend's sister. This results in a fight between Ellis and Victoria's friend Matty Barton, before Matty's mother Moira Dingle intervenes. Ellis surprises his mother, Jessie Grant, with a visit to the village, and Victoria is shocked to discover Ellis is Jessie's son. Ellis reveals he has decided to drop out of university as he doesn't want to be a PE teacher - Jessie wanted him to be one. Jessie's boyfriend Marlon Dingle offers Ellis his spare room, and Ellis moves into Tall Trees Cottage. Ellis takes a liking to Marlon, especially after discovering Marlon's love for video games. Ellis tells his mother that if their relationship was to work, she would have to tell Marlon about Billy Fletcher, her eldest son who was serving a prison sentence. Jessie refuses and tries to get Ellis to not tell Marlon, but Marlon walks in on their argument. Ellis reveals the truth. Marlon isn't troubled by the news, but Ellis is fuming to discover that Billy is up for parole. This causes a major row between Jessie and Ellis. However, after a heart to heart, they make up.
Ellis begins to develop feelings for Victoria and asks her out, to which she agrees. When she discovers Adam has moved on, she decides to do the same and starts a proper relationship with Ellis.
Ellis's brother Billy Fletcher arrives in the village on Christmas Day, at Marlon and Jessie's wedding. Ellis is angry at his brother's arrival and threatens to expose his past to everyone.
In January 2019, Victoria thinks she might be pregnant with Ellis's baby but the test comes back negative, which is a delight to Ellis, upsetting Victoria. Ellis hatches a plan to get rid of Billy once and for all and decides to goad him about their mother loving Marlon more than Billy's dad (Evan Fletcher Sr.) leading to Billy punching Ellis. As Billy punches Ellis, Jessie watches as per Ellis' plan. Ellis goes to the police after Robert convinces him that Billy and Victoria are dating behind his back. Jessie is forced to decide between her sons and chooses to defend Billy, which makes Ellis disown both of them and move out.
On Valentine's Day, Ellis cooks Victoria a meal and wishes to become a proper couple with her. Victoria declines and leaves, leaving Ellis heartbroken. Later, Ellis goes to the pub. He sees Billy and Victoria speaking together and kicks off. He follows Billy into the toilets and punches him which leads to a tussle. Ellis then steals the keys to Billy's van, which the latter soon realises. Ellis tries to run him over, but swerves at the last second. Victoria dumps Ellis and Jessie disowns both sons.
Billy and Ellis later make up and decide to put the past behind them, starting a personal trainer business together. However, in April 2019, one of Billy's old accomplices Max Garrick turns up and pressures Billy into doing a job. Ellis finds out what his brother is up to and stops him. This leads Max to go after Billy. Ellis then decides to end his business with Billy.
In late April 2019, Ellis goes on the big night out with a load of the other villagers in hopes of getting back with Victoria. When Ellis goes to the toilet, he sees Max behind him through the mirror and tries to walk away but Max tries to attack him. Luckily, he is saved by Aaron and Robert, while Billy, who receives a text from Max with a picture of Ellis, comes to the club in an attempt to save him. However, Ellis shows no gratitude, and instead has a go at him and leaves. Ellis later meets up with a girl and helps her retrieve her things from inside the club when the fire alarm sounds. The pair start flirting. After leaving the building, they kiss in an alley but the girl soon leaves, making an excuse about her brother being overprotective. Billy manages to speak to Ellis briefly, but soon after, Ellis leaves. Whilst looking for his brother, Billy is pinned against a wall by two men whom Billy assumes to be Max's minions. However, the men reveal that they're actually Kaiden and Tyler, the brothers of Riley - the man Billy viciously attacked. Billy finds Ellis, but upon realising the weapon used to stab Ellis was his own knife, he calls an ambulance before swiftly leaving.
A few weeks later, Ellis is about to go to the police station to review CCTV footage from the club, but Billy attempts to talk him out of it. Aaron takes Ellis to the police station. On the way, they see Billy walking, and stop to speak to him. Billy tells Ellis what actually happened at the club that night, and how it was his fault. Ellis is first angry but later forgives his brother, and the two dispose of the knife together. However, Ellis starts to have panic attacks relating to the stabbing. One day, while in the pub with Belle Dingle, he receives a text from Max which leads to another panic attack. He goes to Tall Trees Cottage, where he hears an intruder at the door. Ellis arms himself with a rolling pin and knocks Marlon out cold, but he soon wakes up. Ellis agrees to get help and receives a diagnosis of PTSD.
2019-2020: Arrival of Al Chapman and Jessie’s departure[]
In August 2019, Ellis' father Al Chapman arrives in the village, after not speaking to Ellis for over a year. Al masks himself as an investor, interested in Ellis and Billy's personal training company. Ellis is enthusiastic to hear that an investment company is showing interest, so organises a meeting. However, he is shocked to discover that the investor is his own father. Al and Ellis catch up in the pub, where Al apologises for not being there for him following his stabbing. He reveals he's been following Ellis on social media and took the opportunity to reconnect with him when he saw his social media advert for an investor. However, Ellis resents Al for not being in contact, and Al reveals he blames Billy for getting Ellis into trouble. Angered, Ellis tells Al to "stuff his offer", but Al tells his sons that he's not intending to go anywhere.
In September 2019, Ellis is furious with his father when he finds out that Al has slept with Jessie, ending her marriage to Marlon. Jessie leaves the village for a teaching job in Dubai, causing Ellis to blame Al and practically disown him. Alongside Billy, Ellis sides with Marlon and continues staying with him. He soon starts dating Belle Dingle, but this relationship is cut short when Ellis leaves the village in October for a job in Dubai.
2020 to 2022: Relationship with Belle, affair with Priya and exit[]
Ellis returns to the village in December 2019. Belle is annoyed that Ellis didn’t tell her he was back, but she soon forgives him and the couple start a real relationship. Following his return, Ellis works at the HOP as a fitness instructor alongside Billy. In January, Ellis begins to suspect Belle is seeing someone else. She denies this and Ellis chooses to believe her, but still thinks something is wrong. She then says that she loves him and Ellis returns the sentiment, thinking that this will be an end to their problems. In March 2020, Belle dumps Ellis and he once again assumes she has found someone else, which it soon becomes clear is Jamie Tate.
In September, Billy and Ellis get a new colleague, Ben Tucker, the rafting instructor and Ellis becomes friends with him. On 9th October 2020, Ellis sleeps with Billy’s ex, Dawn Taylor after spending the afternoon drinking with her. This drives a wedge between the brothers and soon Dawn confesses that she only slept with Ellis to make Billy hate her. Afterwards, Billy is furious with Ellis and hardly speaks to him which causes problems for their business. Soon, Marlon intervenes in their feud and Billy becomes less hostile. In December, Dawn tells both of them that they might have caught an STI from her. This means that both have to get tested and causes more tension between them. Ellis worries about his diagnosis but Billy refuses to discuss the test as he is too angry. They soon find out that they both tested negative for Chlamydia and Billy tells Ellis that he will inform Dawn.
In January 2021, Ellis is kidnapped by Cain Dingle and left on the moors overnight as revenge for Al leaving Cain’s son, Kyle, out in similar conditions. He tries to find his way back but soon the cold gets to him and he ends up collapsing on the hillside. Fortunately, Cain reveals where he left him and Ellis is saved by Al before he freezes to death. When Al tells him the reason Cain did this, Ellis is furious with his father for having a feud that almost got him killed.
He soon starts helping out at his father’s latest business venture, Dingle and Chapman Wellness Retreat. Ellis is forced to work alongside Belle but promises not to let their past affect the business. They also employ his father’s ex fiancé, Priya Kotecha to help coordinate events. Ellis developed feelings for Priya but Priya denies their attraction as she thinks it isn’t right for her to be with someone who was almost her stepson. On 4th March, they end up spending the night together and Ellis is happy, but Priya wants to keep this a secret due to her previous relationship with Al. However Al knows that Ellis was with someone as he didn’t go home and assumes it is Belle, which Ellis doesn’t correct him about. Unfortunately, Al asks Belle and she denies it, leading to Al finding out the truth and he is furious with Priya. Al confronts her but Ellis defends Priya and tells Al he wants nothing to do with him after the way he spoke to Priya. However, Priya ends their relationship after this as she says it’s wrong and she doesn’t want to come between Ellis and his father.
On the 18th October, Ellis and Ben take a group of villagers into the woods on a survival weekend. However, the event is thrown into chaos due to Meena Jutla’s murderous antics. Ellis is unaware of this as he is setting up a surprise lunch for Priya in the centre of the hay maze. Priya is flattered by this and the two sleep together in the tent. Unfortunately, Meena sets the maze on fire, to cover up her murdering Andrea Tate, trapping Ellis and Priya in the blaze. Ellis manages to get them both out, but not before Priya is badly burned. After this, Priya becomes incredibly insecure and refuses to see Ellis anymore. He is heartbroken but has to deal with the fallout from the survival weekend. Kim Tate, who owns HOP orders an investigation into what went wrong. Ellis fears for his job, but Ben is blamed for the incident and Ellis is let off. Ben is furious about this and turns on Ellis as he got to keep his job.
Then Ellis began seeing Belle again as the two grew closer. They dated in secret at first but struggled to find time for each other, leading to Belle booking a personal training session so they can have some time together. Not long after, everyone found out about them and Al disapproved of Ellis dating a Dingle again, but Ellis said he didn’t care what his father thought. When Ellis gets offered a job in Brisbane, he is unsure of whether or not he should take it but after his relationship with Belle ends he decides to go. Al tries to get him to stay, but Ellis says that their relationship is too broken to fix. He leaves on 10th February 2022 after an emotional goodbye with Billy and Priya.
In late 2022, Ellis was mentioned to have returned for Al’s offscreen funeral alongside his mother, Jessie. They did not stay and neither were seen in the village.
In 2024, Ellis was briefly staying in London, but was unable to visit Emmerdale. Billy went down to visit him with his children, Lucas, Clemmie and Evan.
